Huitlacoche Quesadilla with Tortillinas®

Huitlacoche quesadillas are a very traditional Mexican recipe; huitlacoche is a fungus that appears on corn during the rainy season. The huitlacoche recipe is very tasty, quick to prepare, and your family will love it.

  • 1 package Tía Rosa® Tortillinas® whole grain
  • 2 serrano chiles
  • 1 bunch fresh epazote
  • 200 grams Oaxaca cheese
  • 1/2 onions, finely chopped
  • 1 clove garlic, chopped
  • 300 grams huitlacoche
  • 1 pinch salt
  • 1 pinch pepper

  • Remove the seeds from the chili and chop finely.
  • Chop the epazote finely.
  • Shred the Oaxaca cheese.
  • Fry the onion until it is translucent, then add the garlic, huitlacoche, salt, pepper, epazote, and serrano chili, and fry for 5 more minutes.
  • Heat a Tortillina® Tía Rosa® Whole Grains®, add a bit of the previous mixture and Oaxaca cheese in the center.
  • Close and heat on both sides until the cheese is melted.
