Mancha Manteles

This delicious traditional recipe from Oaxaca consists of a blend of spices, tomatoes, and a touch of ancho chili. Try making this delicious dish; your family will love it. You can add plantains and pineapple slices.

  • 5 ancho chiles, cleaned and deveined
  • 2 liters water
  • 4 tomatoes, cleaned
  • vegetable oil, as needed
  • 1 kilo beefsteak, ball
  • salt, to taste
  • 1 onion
  • 1/2 garlic, without the core
  • 1 pinch cinnamon powder
  • 7 cloves
  • 1 pinch ground pepper
  • chicken bullion, to taste
  • 2 teaspoons sugar

  • Boil the ancho chiles in half a liter of water; once they are soft, add the tomatoes. These should be soft by the end of the cooking. In a pressure cooker, add the oil and place the steaks in a single layer; add a pinch of salt between each steak, cook for 5 minutes, and set aside.
  • Blend the chiles with the onion and garlic, adding the same water you used to boil them. Blend until you have a uniform mixture.
  • Grind a pinch of salt, cinnamon, cloves, and pepper in a molcajete. Set aside.
  • In a saucepan, heat a little oil, pour in the sauce you made. Let it come to a boil and add chicken broth and the salt and pepper mixture. Lower the heat and gradually add the steaks. If it's slightly thick, you can add a little water while stirring.
  • Taste the mixture, and if you feel it's a bit spicy, add the tablespoons of sugar.
  • Let it boil one last time and turn off the heat.
