Mexican Enmoladas

You have to try this typical Mexican dish, it’s a delicious enmoladas with melted cheese filled with chicken. Serve with tomato, lettuce, onion, and sour cream.

  • 1/2 cups Doña María® mole paste
  • 2 cups chicken broth
  • 1/2 cups sour cream
  • 2 1/2 cups chicken breast, cooked and shredded
  • 8 corn tortillas
  • 1/2 cups cheese, shredded
  • 1/2 cups Monterey Jack cheese, jack, shredded
  • onion, for serving
  • lettuce, for serving
  • tomato, for serving

  • Preheat the oven to 180°C.
  • In a medium pot, add the Doña María® mole paste and dissolve it with the chicken broth and sour cream. Cook over low heat until completely dissolved and a homogeneous sauce is obtained.
  • Add ¼ cup of the mole to a baking dish. Dip each tortilla in the hot sauce, place the shredded chicken in the center, and roll it up, arranging it in the baking dish. Cover the enmoladas with the remaining mole sauce.
  • Sprinkle with the cheeses and bake for 25 to 30 minutes.
  • Serve with onion, lettuce, tomato, and cream and enjoy.
