60 grams San Juan® egg whites
60 grams bread, with crust
40 grams bacon
30 grams chorizo, without intestine
5 grams garlic
10 grams raisins
5 grams salt
40 milliliters water
5 grams sweet paprika
5 grams paprika
20 grams avocado
15 milliliters olive oil

Cut the bread into large pieces, mix water with salt to spray and moisten all the crumbs, cover with a towel, and let rest for 30 minutes.
Heat a large skillet with olive oil, add finely chopped garlic, the crumbs, and sprinkle with sweet paprika and paprika.
In a pan, cook half of the bacon with the chorizo, crumbling it at the same time, and incorporate it into the crumbs, stirring constantly.
Incorporate the previously hydrated raisins. Reserve.
Cook the San Juan® Egg Whites in the shape of a tortilla in a hot skillet. Reserve.
Place the crumbs on the desired plate and put the San Juan® Egg White tortilla on top of the finished dish.
Garnish with the other half of fried bacon, sliced avocado, and cherry tomatoes.
