  • vegetable oil
  • 1/2 cups onion, in medium cubes
  • 1/2 cups chorizo, shredded
  • 1/2 cups red bell pepper, in medium cubes
  • 1/2 cups yellow bell pepper, in medium cubes
  • 1/4 cups Jalapeño chile, seedless, in medium cubes
  • 3 cups mortadella, in medium cubes
  • 1 cup Manchego cheese, grated
  • refried beans

  • Heat the oil in a skillet and cook the onion and chorizo for 3 minutes or until slightly browned. Then add the bell peppers and jalapeño pepper and cook for 2 more minutes.
  • Add the mortadella and cook for 5 minutes or until all the ingredients are well browned. Then, add the cheese, cover, turn off the heat, and let it gratin.
  • Spread the toasts with beans, serve the mortadella mixture, and accompany with green salsa.
