4 cups nopal, cut into cubes and cooked, for the pancakes
1 1/2 cups Cotija cheese, crumbled, for the pancakes
2 eggs, for the pancakes
salt, for the pancakes
pepper, for the pancakes
vegetable oil, for the pancakes
pot beans, for accompaniment

For the nopal pancakes: Mix the nopales, Cotija cheese, egg, salt, and pepper in a bowl. Set aside.
Heat enough oil in a skillet, pour a ladle of the previous mixture to form the pancakes, and fry on low heat for 5 minutes on each side. Drain on paper towels and set aside.
Blend the tomatoes, morita chili, garlic, cilantro, and chicken broth. Set aside.
Heat the oil in a saucepan over medium heat, sauté the sauce, and cook for 10 minutes.
Serve the nopal pancakes in morita sauce and accompany with pinto beans.
