Nopal pancakes in morita sauce

  • 6 tomatillos, for the morita sauce
  • 2 morita chiles, for the morita sauce
  • 1/4 onions, roasted, for the morita sauce
  • 1 clove garlic, grilled, for the morita sauce
  • 1/4 bunches cilantro, for the morita sauce
  • 1 cup chicken broth
  • vegetable oil
  • 4 cups nopal, cut into cubes and cooked, for the pancakes
  • 1 1/2 cups Cotija cheese, crumbled, for the pancakes
  • 2 eggs, for the pancakes
  • salt, for the pancakes
  • pepper, for the pancakes
  • vegetable oil, for the pancakes
  • pot beans, for accompaniment

  • For the nopal pancakes: Mix the nopales, Cotija cheese, egg, salt, and pepper in a bowl. Set aside.
  • Heat enough oil in a skillet, pour a ladle of the previous mixture to form the pancakes, and fry on low heat for 5 minutes on each side. Drain on paper towels and set aside.
  • Blend the tomatoes, morita chili, garlic, cilantro, and chicken broth. Set aside.
  • Heat the oil in a saucepan over medium heat, sauté the sauce, and cook for 10 minutes.
  • Serve the nopal pancakes in morita sauce and accompany with pinto beans.
