For the nopal pancakes: Mix the nopales, Cotija cheese, egg, salt, and pepper in a bowl. Set aside. Heat enough oil in a skillet, pour a ladle of the previous mixture to form the pancakes, and fry on low heat for 5 minutes on each side. Drain on paper towels and set aside.
