  • 2 guajillo chiles, cleaned and soaked
  • 1 chipotle chile, marinated
  • 3 árbol chiles
  • 1/4 onions, grilled
  • 2 cloves garlic
  • 1 cup crackers
  • 1 cup milk
  • 1/2 teaspoons cumin

  • 500 grams ground beef
  • 2 cups chorizo
  • 2 tablespoons cilantro

  • Blend the guajillo chiles, chipotle chile, árbol chiles, onion, garlic, crackers, milk, cumin, salt, and pepper until a paste forms.
  • In a bowl, mix the pork meat, ground beef, chorizo, and cilantro, pour the previous preparation over the meat and mix until combined. Form medium balls and set aside.
  • Place plastic in a tortilla press, put the meatball and press to form a milanesa. Set aside.
  • Heat the oil in a pan over medium heat and fry the pacholas for 5 minutes on both sides. Drain on paper towels to remove excess oil.
  • Serve the pacholas with salad and refried beans.
