Blend the guajillo chiles, chipotle chile, árbol chiles, onion, garlic, crackers, milk, cumin, salt, and pepper until a paste forms. In a bowl, mix the pork meat, ground beef, chorizo, and cilantro, pour the previous preparation over the meat and mix until combined. Form medium balls and set aside.
