Plantain Molotes Filled with Ground Beef

Molotes are a dish originating from Veracruz, consisting of fried plantain filled with beans, making them delicious and ideal for any occasion. But with this recipe for molotes, we give a twist to the traditional molotes by filling them with ground beef. To complement their flavor, serve them with lettuce, cream, cheese, and red onion. We recommend grinding your plantain puree very well to avoid lumps.

  • 1 cup onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 4 cups ground meat
  • 1 1/2 cups tomato purée
  • salt

  • 4 plantains
  • 6 tablespoons wheat flour

  • For the filling: heat a skillet over medium heat, add vegetable oil, onion, and garlic, and sauté for 5 minutes; then add the ground beef and cook for 10 more minutes.
  • Add the tomato puree, season with salt and pepper, and cover. Cook for 10 minutes and set aside.
  • For the molotes: cook the plantain in water for 10 minutes, remove, peel, and make a puree; mix with the flour and add salt.
  • To assemble the molotes: take two tablespoons of the puree and fill with ground beef; close the molotes and fry for 5 minutes. Remove.
  • Serve the molotes with lettuce, cream, cheese, red onion, and salsa.
