Poblano Molotes

  • 1/2 cups onion, finely chopped
  • 1 cup chorizo, cut into cubes
  • 2 cups potato, peeled, cubed, and cooked
  • 2 cups masa harina, ideal for making tortillas, for the dough
  • 1 cup wheat flour, for the dough
  • 1 tablespoon baking powder, for the dough
  • 1 tablespoon lard, for the dough
  • salt, for the dough
  • water, warm, for the dough
  • vegetable oil, for frying
  • sour cream, for decoration
  • Romaine lettuce, in strips, for decoration
  • queso fresco, for decoration

  • For the filling: heat the oil in a saucepan over medium heat and cook the onion for 3 minutes, then add the chorizo, pressing with a spoon to break it apart and cook for 5 minutes or until well cooked. Then, add the potatoes, salt, and pepper, stirring until everything is perfectly combined. Set aside.
  • For the dough: mix the nixtamalized corn flour, wheat flour, baking powder, lard, and enough salt. Once the dry ingredients are combined, gradually add the warm water and knead with clean hands until you achieve a smooth and hydrated texture.
  • Form a small ball of dough with your hands, place it on a plastic sheet, and roll out the dough into an oval shape, 12 cm long x 6 cm wide. With a spoon, place the filling in the center and close it well. Press the edges with your fingers to prevent the filling from leaking out while frying.
  • Heat enough oil in a pot over medium heat and fry the poblano molotes for 6 minutes on each side or until golden brown. Drain on absorbent paper.
  • Decorate the molotes with sour cream, lettuce, fresh cheese, and serve with your preferred sauce.
