For the filling: heat the oil in a saucepan over medium heat and cook the onion for 3 minutes, then add the chorizo, pressing with a spoon to break it apart and cook for 5 minutes or until well cooked. Then, add the potatoes, salt, and pepper, stirring until everything is perfectly combined. Set aside. For the dough: mix the nixtamalized corn flour, wheat flour, baking powder, lard, and enough salt. Once the dry ingredients are combined, gradually add the warm water and knead with clean hands until you achieve a smooth and hydrated texture.
