Pork Adobada Mixiotes

Treat your whole family by preparing these pork mixiotes with a spiced marinade of cumin, oregano, and the subtle flavor of avocado leaf, mixed with a combination of vegetables that make them very nutritious and delicious.

  • 1/3 cups vinegar
  • 3 guajillo chiles, deveined and soaked
  • 2 ancho chiles, deveined and soaked
  • 2 cloves garlic
  • 1/4 onions
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 kilo pork, pulp
  • 1 1/2 cups nopal, cut into strips
  • 1 cup button mushrooms, cut into quarters
  • 2 xoconostle, cut in half and seedless
  • 1/4 cups onion, cut into strips

  • For the sauce, blend the vinegar, guajillo chili, ancho chili, garlic, onion, cumin, oregano, and season with a pinch of salt.
  • Pour over the pork and let marinate for 30 minutes.
  • In a bowl, mix the nopales, mushrooms, xoconostle, and onion, season with a pinch of salt.
  • On a mixiote leaf, place an avocado leaf, add meat and the vegetable mixture. Close with a hemp string.
  • Place the mixiotes on the rack in a steamer and cook for 1 hour or until the meat is cooked. Serve immediately.
