Pork Barbacoa

  • 1/4 cups lime juice, for the salad

  • For the marinade, blend the guajillo chili, ancho chili, garlic, allspice, coriander seeds, cumin, oregano, bay leaves, chicken broth and set aside.
  • Place water, the rack, banana leaf, pork pulp in a steamer, then pour the marinade and alternate with avocado leaves, add the pork rib, avocado leaves, cover with banana leaf, lid, and cook for 90 minutes.
  • For the nopal salad, in a bowl mix the nopales, red onion, lime juice, season with salt, cilantro, and oregano, and let it pickle for 30 minutes.
  • On a cutting board, chop the meat and set aside.
  • Serve the barbacoa with the nopal salad, green sauce, and accompany with tortillas.
