1 leaf bay
2 heads garlic, roasted
2 onions, grilled
1 bunch thyme
1 handful black peppercorn
2 cloves
1 handful oregano
2 kilos pork bone, (rump)
1 kilo pork, (lean)
1 kilo hominy corn, popped
1/2 achiote
1/4 guajillo chiles
1 onion, finely chopped
1 bunch radish, chopped
1 Romaine lettuce, chopped

Bring the corn to a boil until it completely pops.
In a kitchen cloth, put the spices, garlic, and onion, then tie it all up to make a little bundle and place it in the corn that is cooking.
When the corn is cooked, add the meat, wait for it to cook, and add salt.
Boil the chiles and blend them with the achiote, then pour them into the corn and meat.
Once everything is cooked, remove the meat and shred it.
Serve the pozole with its accompaniments.
