4 guajillo chiles, clean and hydrated, for the marinade
1/4 onions, for the marinade
1 clove garlic, for the marinade
1 cinnamon stick, for the marinade
3 black peppercorns, for the marinade
2 cloves, for the marinade
1/8 cups white vinegar, for the marinade
1/2 cups chicken broth, for the marinade

Cook the pork spine, garlic, onion, and salt in a pot with enough water for 1 hour or until the meat is tender and well cooked. Drain and set aside.
Blend the tomato, guajillo chiles, onion, garlic clove, cinnamon, pepper, clove, vinegar, chicken broth, and salt until you have a marinade.
Sauté the pork spine in a pot with enough oil for 3 minutes, pour in the marinade, and cook for 5 minutes or until the pork spine in red sauce is well cooked.
Serve the pork spine in red sauce and accompany with white rice.
