  • Cook the pork spine, garlic, onion, and salt in a pot with enough water for 1 hour or until the meat is tender and well cooked. Drain and set aside.
  • Blend the tomato, guajillo chiles, onion, garlic clove, cinnamon, pepper, clove, vinegar, chicken broth, and salt until you have a marinade.
  • Sauté the pork spine in a pot with enough oil for 3 minutes, pour in the marinade, and cook for 5 minutes or until the pork spine in red sauce is well cooked.
  • Serve the pork spine in red sauce and accompany with white rice.
