  • vegetable oil
  • 5 tomatillos, in quarters
  • 1/4 cups onion
  • 1 clove garlic
  • 1/4 cups cilantro
  • 2 serrano chiles, without tail
  • 3/4 cups guava, seedless
  • salt
  • pepper
  • 1/2 cups vegetable broth
  • vegetable oil
  • 1 kilo pork chump, in medium cubes
  • 2 cups guava, seedless, in medium cubes
  • 1 cup purslane, cleaned
  • corn tortillas
  • black beans

  • Season the tomatoes, onion, garlic, cilantro, serrano chili, and guava with salt and pepper and sauté in a pan with a little oil for 5 minutes or until they begin to change color.
  • Blend the vegetables with the vegetable broth until you obtain a sauce. Set aside.
  • Heat a little oil in the same pan and cook the meat for 5 minutes. Add the guavas and cook for a couple more minutes.Pour in the sauce, add the purslane, cook for 15 minutes, and adjust the seasoning.
  • Serve the stew and accompany with beans and corn tortillas.
