In a medium pot, boil the potatoes for 15-20 minutes or until tender.
In a large bowl, place the potatoes, cubed cheese, milk, butter, salt, and pepper. Mash everything with a fork or potato masher and mix well. Set aside.
Pour the Oleic oil into a medium skillet over medium-high heat. Place 1 tablespoon of the mashed potato mixture in a tortilla and roll it up. Carefully place the tortilla seam-side down into the hot oil. Fry for about 2-3 minutes or until golden brown on all sides. Remove from heat and place on a plate lined with paper towels to absorb excess oil.
Serve with cream to taste, lettuce, and grated cheese.
