Potato and Cheese Flautas

These flautas served with cream, sauce, and grated cheese are perfect for making at home; if you're organizing a party, they are simple and delicious.

  • 1 kilo corn tortillas

  • In a medium pot, boil the potatoes for 15-20 minutes or until tender.
  • In a large bowl, place the potatoes, cubed cheese, milk, butter, salt, and pepper. Mash everything with a fork or potato masher and mix well. Set aside.
  • Pour the Oleic oil into a medium skillet over medium-high heat. Place 1 tablespoon of the mashed potato mixture in a tortilla and roll it up. Carefully place the tortilla seam-side down into the hot oil. Fry for about 2-3 minutes or until golden brown on all sides. Remove from heat and place on a plate lined with paper towels to absorb excess oil.
  • Serve with cream to taste, lettuce, and grated cheese.
