Ingredients: 3 potatoes, medium, peeled; 1 cup Manchego cheese, in small cubes; 1/4 cups cow's milk; Oléico® safflower oil, as needed; 1 kilo corn tortillas; 1/4 cups sour cream; panela cheese, grated; 1/4 lettuce, cut into strips; 2 tablespoons butter

In a medium pot, boil the potatoes for 15-20 minutes or until tender. In a large bowl, place the potatoes, cubed cheese, milk, butter, salt, and pepper. Mash everything with a fork or potato masher and mix well. Set aside.
