Potato Gorditas with Chorizo

  • 1 1/2 cups corn masa flour, for the dough
  • 1/8 cups lard, for the dough
  • 1/2 teaspoons salt, for the dough
  • 1 cup water, for the dough
  • vegetable oil, for the potatoes with chorizo
  • 1/2 cups onion, finely chopped, for the potatoes with chorizo
  • 1 1/2 cups chorizo, cut into small pieces
  • 1 1/2 cups potato, cooked and cut into medium cubes
  • 1 cuaresmeño chile, in strips, for the potatoes with chorizo
  • salt, for the potatoes with chorizo
  • pepper, for the potatoes with chorizo
  • 1/4 cups sour cream, for garnish
  • 1/4 cups queso fresco, grated, for garnish
  • 1/4 cups onion, chopped, for garnish
  • 1/4 cups cilantro, chopped, for garnish

  • For the dough, mix the corn flour in a bowl with the lard and salt; gradually add water while stirring until the ingredients are combined and a thick consistency is achieved. Set aside.
  • For the potatoes with chorizo, heat oil in a saucepan over medium heat and cook the onion until it begins to look shiny.
  • Add the chorizo and fry while stirring. Incorporate the cubed potato, cuaresmeño chili, salt, and pepper; cook for 5 minutes. Let cool and set aside.
  • To assemble the potato gorditas with chorizo, take a portion of approximately 35 grams of dough, form a ball, and flatten it with your hands until you form a medium circle half a centimeter thick.
  • Cook on a hot comal over medium heat on both sides. Then, cut the gordita in half with a knife and fill it with the potatoes and chorizo.
  • Serve the potato gordita with chorizo and accompany with cream, cheese, and green sauce.
