  • 500 grams masa dough
  • 1/4 cups chicken broth
  • salt
  • 1 teaspoon baking powder
  • 1 teaspoon vegetable oil
  • 1 tablespoon alpura® butter
  • 1/2 cups onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 2 cups potato, cooked, in small cubes
  • salt
  • 1 cup Oaxaca cheese, shredded
  • cooking spray
  • N/A Crema alpura®
  • lettuce, in thin strips
  • queso fresco, grated
  • green salsa, to accompany

  • In a bowl, mix the corn dough, chicken broth, salt, baking powder, and vegetable oil until you obtain a homogeneous dough. Cover the bowl with a damp cloth so the dough doesn't dry out.
  • Heat the butter in a skillet over medium heat, add the onion and garlic and sauté for 5 minutes. Then, add the potatoes, mash them, and season with salt. Set aside.
  • To form the quesadillas: place a plastic sheet in a tortilla press, place a ball of dough of 5 cm and flatten. Fill with a little potato and cheese. Close the quesadillas and repeat with all the dough.
  • Place the quesadillas in the air fryer tray and spray with cooking spray. Cook at 180 °C for 15 minutes.
  • Serve the healthy quesadillas and garnish with Crema Alpura®, lettuce, fresh cheese, and green sauce.
