Potato Sope with Chorizo

Get to work and prepare this traditional Mexican snack at home, it's very easy! Don't forget to serve your potato sopes with chorizo with green salsa, lettuce, and cheese.

  • 300 grams chorizo
  • 2 cups potato, in cubes and precooked
  • 1 1/2 cups corn masa flour, for the dough
  • 1 teaspoon baking powder, for the dough
  • salt, for the dough
  • water, warm, for the dough

  • 2 cups refried beans
  • panela cheese, grated, for garnish
  • Romaine lettuce, finely chopped, for garnish
  • salsa, for serving

  • Heat the oil in a skillet over medium heat, cook the chorizo for 3 minutes, then add the potato, mix everything well, and cook for 3 more minutes or until the chorizo is well cooked. Adjust the seasoning, remove from heat and set aside.
  • For the dough: place the corn flour, baking powder, and salt to taste in a bowl. Then, pour in the water gradually and mix with your hands until you obtain a homogeneous dough. Set aside.
  • Take the necessary portion of dough and form a ball with your hands and flatten it slightly in a press until you obtain a thickness of half a centimeter.
  • Heat the oil in a griddle over medium heat and cook the sope for 2 minutes on each side until it changes color. Remove from heat and pinch the edge with your fingers or a fork. Set aside.
  • Place the sopes on a plate, spread two tablespoons of beans, add the chorizo with potatoes, sprinkle cheese, add lettuce, and serve with your preferred salsa.
