Potato Tacos with Cheese

Try these crispy potato tacos, which are bathed in a creamy three-cheese sauce; the combination of flavors is simply irresistible! Plus, we added a touch of green sauce; they are simply delicious!

  • 2 tablespoons butter, in cubes
  • 2 cups potato, in medium cubes and cooked
  • 1 cup sour cream
  • 1/4 cups Cotija cheese, grated
  • 2 tablespoons parsley, finely chopped
  • salt

  • corn tortillas, hot
  • vegetable oil
  • 2 tablespoons butter, for the cheese sauce
  • 2 teaspoons garlic, finely chopped, for the cheese sauce
  • 1/2 cups beer
  • 1 cup asadero cheese, grated
  • 1 cup Oaxaca cheese, shredded
  • 1 cup Manchego cheese, grated
  • parsley, for garnish
  • green salsa
  • Sidral Mundet® Apple flavor

  • Heat the butter in a pot over medium heat, add the potatoes and mash them. Then, add the cream, cheese, parsley, salt, and pepper, and mix very well. Cook over low heat for another 5 minutes. Set aside.
  • Fill each tortilla with the potato, roll it like a taco, and insert two toothpicks to keep it closed. Fry the potato tacos in a pot with oil over medium-high heat for 5 to 8 minutes or until golden brown. Remove and place on a plate with paper towels.
  • For the cheese sauce: Heat the butter in a cast-iron skillet, melt over medium heat, add the garlic, and sauté for 5 minutes, pour in the beer and let it reduce for 2 minutes. Incorporate the three cheeses and let it cook over low heat for 5 minutes.
  • Place the tacos on a plate, cover with cheese sauce, garnish with parsley leaves and green sauce, and serve with Sidral Mundet® Apple flavor.
