Ingredients: 2 tablespoons butter, in cubes; 2 cups potato, in medium cubes and cooked; 1 cup sour cream; 1/4 cups Cotija cheese, grated; 2 tablespoons parsley, finely chopped; salt; pepper; corn tortillas, hot; vegetable oil; 2 tablespoons butter, for the cheese sauce; 2 teaspoons garlic, finely chopped, for the cheese sauce; 1/2 cups beer; 1 cup asadero cheese, grated; 1 cup Oaxaca cheese, shredded; 1 cup Manchego cheese, grated; parsley, for garnish; green salsa; Sidral Mundet® Apple flavor

Heat the butter in a pot over medium heat, add the potatoes and mash them. Then, add the cream, cheese, parsley, salt, and pepper, and mix very well. Cook over low heat for another 5 minutes. Set aside. Fill each tortilla with the potato, roll it like a taco, and insert two toothpicks to keep it closed. Fry the potato tacos in a pot with oil over medium-high heat for 5 to 8 minutes or until golden brown. Remove and place on a plate with paper towels.
