Rajas and Cheese Quesadillas

Among the Mexican snacks, fried quesadillas are one of the favorites, and with this recipe for rajas and cheese quesadillas, you can prepare them at home. Making them will only take you 25 minutes, and to enhance their flavor, don't forget to serve them with cream and a smashed salsa. It is important that your filling is cold so that the quesadilla dough can be handled correctly.

  • 2 cups corn masa flour, for the dough
  • 1/4 cups wheat flour, for the dough
  • 1/8 cups vegetable oil, for the dough
  • 1 teaspoon REXAL® baking powder, (5 grams) for the dough
  • 1 teaspoon salt, for the dough
  • water, for the dough
  • 1 tablespoon vegetable oil
  • 1/2 cups onion, sliced
  • 1 tablespoon garlic, finely chopped
  • 2 cups Poblano chile strips
  • 1 cup yellow corn kernels
  • 2 cups asadero cheese, cut into strips
  • vegetable oil, for frying
  • sour cream, for serving
  • lettuce, cut into small strips, for serving
  • red salsa, for serving

  • For the dough, in a bowl mix the corn flour, wheat flour, vegetable oil, REXAL® baking powder, salt, and water.
  • For the filling, in a skillet over medium heat, heat the oil, sauté the onion, and garlic, add the strips of poblano chili, the yellow corn kernels, season with salt and pepper, and cook for 5 minutes. Remove and let cool.
  • Place small balls of dough on the press and make tortillas, fill with the rajas and the asadero cheese, and using your fingers, close them like quesadillas, pressing the edges to prevent them from opening.
  • Fry in a pot with hot oil over medium heat for 5 minutes or until golden. Drain on paper towels, serve with cream, lettuce, and salsa.
