Sauté the onion in a hot skillet with oil. Add the rajas, cook, and season with salt and pepper. Remove from heat and set aside.
Add the beans from the pot with chicken broth to the blender and blend until you get a smooth sauce, remove from heat and cook in a small pot over medium heat, stirring constantly. Season and set aside.
Heat the tortillas on a griddle, once hot, fill them with the rajas mixture.
Place the stuffed tortillas on a plate, cover them with the bean sauce, add a tablespoon of cream, and sprinkle with panela cheese. Decorate with red onion, more rajas, and fresh cilantro.
