Rajas-Stuffed Enfrijoladas

  • 1/2 cups beans, from the pot or with broth
  • 3/4 cups chicken bullion
  • 3 corn tortillas
  • 1 cup Poblano chile strips
  • 1 tablespoon vegetable oil
  • 1/4 onions, sliced
  • 1/2 cups panela cheese, grated
  • 1 teaspoon salt
  • 1/2 teaspoons pepper
  • 1 tablespoon sour cream
  • Poblano chile strips, for decoration
  • fresh cilantro, for decoration

  • Sauté the onion in a hot skillet with oil. Add the rajas, cook, and season with salt and pepper. Remove from heat and set aside.
  • Add the beans from the pot with chicken broth to the blender and blend until you get a smooth sauce, remove from heat and cook in a small pot over medium heat, stirring constantly. Season and set aside.
  • Heat the tortillas on a griddle, once hot, fill them with the rajas mixture.
  • Place the stuffed tortillas on a plate, cover them with the bean sauce, add a tablespoon of cream, and sprinkle with panela cheese. Decorate with red onion, more rajas, and fresh cilantro.
