  • Season the steaks with salt and pepper and let them rest for 5 minutes.
  • Heat the oil over medium heat in a saucepan or deep skillet and cook the onion for 10 minutes or until caramelized, meaning until the onion takes on a dark color. Then add the meat and season with salt and pepper; cook for an additional 15 minutes or until the meat is cooked and tender.
  • For the sauce: roast the tomatoes, onion, garlic, and serrano chiles on a comal over high heat. Remove from heat.
  • Grind the coarse salt, cumin, and pepper in a molcajete, then add the onion, garlic, and roasted serrano chiles, continuing to press until you obtain a puree. Add the tomatoes and the chipotle pepper in adobo, and once the mixture is well integrated, incorporate the chopped cilantro. Mix and set aside.
  • Serve the onion steaks along with the blended sauce, tortillas, and enough lime; you will love them!
