Recipe for potato pancakes

  • 2 potatoes
  • 1 cup Cotija cheese
  • 1 egg
  • 1 teaspoon salt
  • 1/4 cups cornstarch
  • 1/4 cups vegetable oil

  • Cook the potatoes in a pot with water and salt for 30 minutes or until soft. Drain, let cool, and peel.
  • Place the potatoes in a bowl and mash. Add the egg, cornstarch, and salt. Mix until you achieve a homogeneous consistency.
  • Form the potato pancakes and set aside.
  • Heat the oil in a skillet over medium heat and cook the pancakes until golden brown. Drain on paper towels and serve with Del Valle Frut® Citrus.
