  • 10 guajillo chiles, seedless
  • 5 ancho chiles, seedless
  • 3 chilhuacle chiles, seedless
  • 1/2 onions
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 3 allspice berries
  • 2 cloves
  • 1/2 cinnamon sticks
  • 3 tablespoons lard
  • 1 cup almonds
  • 1 cup peanuts
  • 5 vanilla cookies
  • 1 tortillas
  • chicken broth
  • 1 Mexican chocolate
  • 1 tablespoon lard
  • salt
  • Mexican red rice
  • Aires de Campo® organic chicken leg and/or thigh, cooked, for serving

  • In an air fryer, roast the guajillo chiles, ancho chile, chilhuacle chile, onion, garlic cloves, cumin, cloves, and cinnamon on a comal for 3 minutes at 160°C. Set aside.
  • In the air fryer, roast the almonds and peanuts for 5 minutes at 160°C. Set aside.
  • Blend the chiles, almonds, peanuts, spices, cookies, and chicken broth for 5 minutes or until you achieve a smooth consistency.
  • Heat the lard in a saucepan, pour in the mole, season with salt, and cook over low heat for 1 hour, stirring continuously. Once the fat from the mole rises, it will be ready to serve.
  • Serve the red mole and accompany it with chicken and red rice.
