Red Tamale Cake

Try this exquisite red tamale cake with chicken, as it is an ideal recipe to enjoy with family, but much easier and simpler thanks to the Oster® French Door Oven. We assure you it will be a success!

  • 6 cups masa mix for tamales, for the dough
  • 3 cups lard, melted, for the dough
  • 5 cups chicken broth, for the dough
  • salt, for the dough
  • 2 tablespoons vegetable oil, for the sauce
  • 1/2 onions, in quarters, for the sauce
  • 1 clove garlic, for the sauce
  • 8 tomatoes, in halves, for the sauce
  • 2 morita chiles, rehydrated, seedless, for the sauce
  • 1/2 cups chipotle chile in adobo sauce, for the sauce
  • 1/2 cups chicken broth, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • 1/2 teaspoons cumin, for the sauce
  • banana leaf, roasted
  • 2 cups chicken breast, cooked and shredded

  • Mix the lard and tamale flour with a hand mixer, gradually incorporating it while alternating with the chicken broth, without stopping to beat. Finally, add salt. You should obtain a fluffy and light dough. Set aside.
  • Heat the oil in a pot over high heat and cook the garlic, onion, tomato, morita chiles, and chipotle chiles for 5 minutes or until they are slightly browned. Remove from the pot and blend with the chicken broth, salt, pepper, and cumin for 3 minutes. Return to the heat and cook the sauce for an additional 10 minutes; you should obtain a thick sauce.
  • To form the red tamale cake: Place a layer of tamale dough in a baking dish, then add a layer of red sauce, add a layer of chicken, and cover with more tamale dough to fill the mold. Cover the tamale cake with roasted banana leaves and aluminum foil. Bake in the Oster® French Door Oven at 180 °C for 40 minutes.
  • Remove the red tamale cake from the oven and serve it in the same baking dish with great care.
