Rib Huaraches with Cheese

Treat your family to these delicious rib huaraches, they are finger-licking good! Best of all, this Mexican snack will be ready in 15 minutes.

  • 300 grams corn masa flour
  • water, warm
  • salt
  • lard, for frying
  • 500 grams beef rib, in small cubes, for the filling
  • salt
  • pepper
  • 4 cups Oaxaca cheese, for the filling
  • 4 cups refried beans
  • lard, for frying the huaraches
  • queso fresco, grated, for decoration
  • cilantro, finely chopped, for decoration
  • avocado, in slices

  • For the dough: Place the corn flour in a bowl, pour in enough water, little by little, and season with salt. Knead with your hands until you obtain a moist and manageable dough. Set aside.
  • Heat the lard on a grill over medium-high heat and cook the ribs, seasoning with salt and pepper; cook until the rib is tender. Then you can add the cheese and broil for 2 more minutes.
  • Start forming your huaraches, take a necessary amount of dough, make a hole in the center and fill with beans, then shape it into a roll and place it vertically in the tortilla press. Press and shape the huaraches.
  • Cook the huarache on a griddle over medium heat for two minutes on each side or until the dough is well cooked. Once cooked, add the lard to finish cooking the huarache, lower to medium heat and place the rib filling with cheese on top. Decorate with fresh cheese, cilantro, and avocado.
