For the dough: Place the corn flour in a bowl, pour in enough water, little by little, and season with salt. Knead with your hands until you obtain a moist and manageable dough. Set aside. Heat the lard on a grill over medium-high heat and cook the ribs, seasoning with salt and pepper; cook until the rib is tender. Then you can add the cheese and broil for 2 more minutes.
