Ring of Red Chilaquiles

You will love this recipe for red chilaquiles because it is really easy to prepare and has an amazing presentation, in the shape of a ring. Additionally, it is one of the classic and easiest dishes in Mexican cuisine, which is always a practical option for the whole family. We recommend covering with aluminum foil to keep your ring warm and don’t forget to serve it with cream, cheese, onion, and avocado.

  • 1 clove garlic, for the sauce
  • 1/4 onions, for the sauce
  • 4 tomatoes, boiled, for the sauce
  • 3 guajillo chiles, soaked, for the sauce
  • 1/4 cups fresh cilantro, for the sauce
  • 2 tablespoons vegetable oil, for the chilaquiles
  • salt, for the chilaquiles
  • pepper, for the chilaquiles
  • 3 bags Tostitos® red sauce tortilla chips, (62 gr)
  • 1 chicken breast, cooked and shredded
  • 1/2 cups queso fresco, grated, for decoration
  • 1/2 cups red onion, sliced, for decoration
  • 1/2 cups sour cream, for decoration
  • 1 avocado, in cubes, for decoration

  • For the sauce: blend the garlic, onion, tomato, guajillo pepper, and cilantro. Set aside.
  • In a skillet, heat the oil over medium heat, pour in the sauce, season with salt and pepper, and cook for 10 minutes. Add Tostitos® red salsa and cook for 3 more minutes, or until softened.
  • Pour the chilaquiles into a ring-shaped mold, compact with a spoon, add the shredded chicken, cheese, and onion, and cover with the rest of the chilaquiles until the mold is full.
  • Unmold onto a circular plate, add sour cream, and top with fresh cheese. Finally, decorate with red onion and avocado slices.
