Sopitos

Sopitos are an important element in the gastronomy of the state of Colima, they are a traditional snack for dinner, made with handmade tortillas and accompanied by ground beef and sauce.

  • 350 grams ground pork
  • 1/2 kilos corn tortillas, small or sopito
  • 250 grams refried beans
  • 4 tomatoes
  • 1 clove garlic
  • salt
  • pepper
  • 1 pinch oregano
  • 1 pinch cumin
  • 1 tablespoon vinegar
  • panela cheese
  • 1/2 lettuce, finely chopped
  • 2 tomatoes, sliced
  • Oléico® safflower oil, necessary amount
  • 1.5 liters water

  • Bring 1 liter of water to a boil, once boiling, add the ground beef (formed into balls, 3 pieces) with a pinch of salt and let simmer until the meat is cooked (approximately 30 minutes).
  • Sauce: boil 1/2 liter of water with the tomatoes and garlic. Blend with spices (cumin, oregano, salt, pepper), vinegar, and a little water, so it’s not too thick or too runny.
  • Heat the oil (covering 2 cm of the pan), and once it’s hot, fry the tortilla for sopitos (they can be soft or crispy, to your liking, just keep in mind that they will be soaked in broth, so I recommend making them crispier for better resistance).
  • To serve, spread the beans on the tortilla, add the ground beef (already cooked, break the balls so it resembles minced meat for serving), add lettuce, tomato slices, and fresh cheese. When serving, add the broth directly or place it on the side.
