Stuffed chile taco with cheese crust

  • 1 cup chorizo
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups onion, finely chopped
  • 2 cups beans
  • 8 guajillo chiles, rehydrated, without veins or seeds
  • 3 cups Manchego cheese, grated
  • corn tortillas, hot
  • green salsa, to accompany

  • Cook the chorizo in a skillet over medium heat for 5 minutes. Then, add the garlic and onion and cook for 2 more minutes. Incorporate the beans and cook for 5 minutes. Remove and set aside.
  • Place the chiles on a cutting board and fill them with beans and chorizo. Set aside.
  • Add two tablespoons of manchego cheese to a non-stick skillet over medium heat and spread to create an even layer. Cook the cheese crust over medium heat for 5 minutes, then add a tortilla and a stuffed chile and wrap it to form a taco. Remove and set aside.
  • Serve the stuffed chile taco, add a little green salsa, and accompany with a refreshing drink.
