Stuffed Chili Molotes

  • 4 guajillo chiles, soaked, without seeds
  • 1/4 cups water, for the chiles
  • 400 grams corn masa flour
  • 1 teaspoon baking powder
  • salt
  • water, warm
  • 6 Jalapeño chiles
  • 1 1/2 cups Manchego cheese, grated
  • vegetable oil, for frying
  • Romaine lettuce, in strips

  • 1 Sidral Mundet® Strawberry-Kiwi Flavor, of 600 ml

  • Blend the guajillo chiles with water at medium speed until you achieve a paste. Set aside.
  • In a bowl, mix the corn flour, baking powder, and salt. Gradually add the water until you obtain a moist dough. Once the ingredients are combined, add the chili paste. Set aside.
  • Cut the tip of the jalapeño chili and remove the seeds with a knife or spoon. Repeat the same procedure until all chiles are done.
  • Fill the chiles with manchego cheese. Take a portion of dough and cover the chiles. Fry them over medium-high heat for 5 minutes or until golden and well cooked.Remove excess grease with paper towels.
  • Place a bed of lettuce on a serving platter, arrange the molotes, and garnish with cream, cheese, and red onion. Serve with a delicious and refreshing Sidral Mundet® strawberry-kiwi flavor.
