Stuffed Nopales with Meat and Cheese in Red Sauce

  • 6 guajillo chiles, for the red sauce (cleaned and deveined)
  • 1 morita chile, for the red sauce (cleaned and deveined)
  • 2 cloves garlic, for the red sauce
  • 1/4 onions, for the red sauce
  • 1/4 teaspoons oregano, for the red sauce
  • 1/4 teaspoons cumin, for the red sauce
  • 1/4 teaspoons cinnamon, for the red sauce
  • 2 tablespoons Nutrioli® pure soy edible oil, for the red sauce
  • 4 cups water
  • 6 nopales
  • 1 teaspoon baking soda
  • salt and pepper

  • 1 tablespoon Nutrioli® pure soy edible oil
  • 250 grams panela cheese, cut into medium-thick rectangles

  • On a griddle, roast the chiles along with the garlic and onion. Once roasted, soak the chiles in hot water for 10 minutes.
  • Blend the chiles, garlic, onion, oregano, cumin, and cinnamon until you obtain a sauce.
  • Heat the Pure Soy Cooking Oil Nutrioli® in a small pot over medium heat and pour in the sauce, season with salt and pepper, and cook for 10 minutes or until it thickens.
  • In a small pot, cook the nopales in boiling water with baking soda and salt. Drain and set aside.
  • Season the beef with salt, pepper, and onion powder and cook in a skillet over medium heat with Pure Soy Cooking Oil Nutrioli®. Cut into thin strips.
  • On a cutting board, place the nopales, add strips of meat and panela cheese. Roll up and secure with a toothpick.
  • On a plate, serve a bit of sauce and place the nopales on top, serve hot.
