Suadero Sopes

The famous suadero tacos are one of the most requested dishes in taco stands, as they are made with a fatty cut of meat, giving them a lot of flavor. Additionally, they are fried in lard to make them very crispy.We love these tacos so much that we decided to fuse them with another classic of street food: sopes!   • 1 kilo rose meat, in medium pieces
  • water, to boil the suadero
  • 1/2 garlic heads, to boil the suadero
  • 1/4 onions, to boil the suadero
  • coarse salt, to boil the suadero
  • 2 tablespoons lard, to fry the suadero
  • 8 sopes
  • 1 tablespoon lard, to fry the sopes
  • cilantro, finely chopped
  • onion, finely chopped
  • green salsa, for accompaniment
  • Apple-Peach Mundet®

  • Place the suadero, head of garlic, onion, and coarse salt in a pot with water. Cover and cook for 90 minutes. Remove the meat from the pot, place it on a board, and chop it into small pieces.
  • Heat the lard in a pan over high heat, add the suadero, and fry for 10 minutes or until the meat is golden brown. Remove and set aside.
  • Add a little more lard to the same pan and brown the sopes for 5 minutes or until they are golden. Remove.
  • Serve the sopes on a flat plate, add the refried beans, the suadero, onion, cilantro, green sauce, and accompany with Sidral Mundet® Apple-Peach Flavor.
