Traditional Beef Tinga

  • 500 grams skirt steak, precooked and shredded
  • 1 leaf dried bay
  • 500 grams tomato
  • 2 white onions
  • 3 cloves garlic
  • 4 tablespoons chipotle chile in adobo sauce
  • 4 tablespoons vegetable oil
  • salt, to taste
  • black peppercorns, to taste

  • Slice the onion into julienne strips, and cut the garlic into slices.
  • In a griddle, roast the tomatoes, making sure they are evenly toasted on all sides (for this, you need to constantly change their position). Once the skin is blackened, remove them from the heat and place them in a blender. Add the chipotle pepper, salt, and pepper. Blend until you obtain a homogeneous paste.
  • In a pot, add oil and incorporate the onion. Once the onion looks transparent, add the tomato sauce and the sliced garlic. Cook for 20 minutes; if necessary, add a glass of water to prevent the preparation from drying out too much.
  • Incorporate the meat and cook for 10 more minutes.
