Traditional Rellena (Blood Sausage)

While searching for recipes of typical Mexican foods, I realized that this is a widely consumed but less popular dish, so here I leave you a very basic but delicious recipe to prepare rellena, moronga, morcilla, prieta (a sausage made from pig's blood).

  • 250 rice blood sausage
  • 1/2 onions
  • 2 Jalapeño chiles
  • 1 bunch fresh cilantro
  • salt, to taste
  • vegetable oil, necessary amount

  • Finely chop the onion into small cubes, devein and chop the chilies into small cubes, and cut slices of the rellena about 1.5cm wide.
  • Fry the onion and the chili until they change color, add the blood sausage and fry until cooked; you can remove the contents from the casing if you don't like the casing, and it will cook faster. Add salt and chopped cilantro to serve.
