Tripe Tacos Recipe

If you can't visit your favorite taquero, then get to work and prepare this tripe taco recipe; it's the simplest, quickest, and most delicious! Plus, what better to accompany it with than Sidral Mundet® Apple flavor, the most refreshing drink to enjoy with your favorite tacos.

  • 2 kilos beef tripe, clean and fat-free
  • water, for cooking the tripe
  • 1/2 onions, for cooking the tripe
  • 1 garlic head, in half, for cooking the tripe
  • salt, for cooking the tripe
  • 4 tablespoons lard, for frying the tripe
  • 1/4 onions, for the sauce
  • 2 cloves garlic, for the sauce
  • 3 tomatoes, for the sauce
  • 10 árbol chiles, for the sauce
  • coarse salt, for the sauce
  • corn tortillas, for the tacos
  • onion, finely chopped, for the tacos
  • cilantro, finely chopped, for the tacos
  • lime juice, for the tacos
  • Sidral Mundet® Apple flavor, for accompaniment

  • Place the cleaned beef tripe in a pot, cover with water, add the onion, the head of garlic, and season with enough salt. Cover the pot and cook for 40 minutes; you can check if it is cooked by inserting a fork, and if it goes through easily. Remove from the water and set aside.
  • Chop the tripe into small squares.
  • Melt the pork lard in a skillet over medium-high heat, and when it is hot, fry the tripe for 10 minutes or until very golden. Remove from the lard and set aside.
  • For the sauce: Roast the onion, tomato, garlic, and chiles on a comal over high heat for 5 to 8 minutes or until golden.
  • Grind coarse salt, garlic, chiles, and onion in a molcajete until you have a paste, then add the tomatoes and grind very well. Adjust the seasoning and set aside.
  • To serve the tripe tacos: Place 3 tortillas on a plate, fill each tortilla with two tablespoons of tripe, and garnish with onion, cilantro, árbol chili sauce, and lime. Now enjoy with Sidral Mundet® Apple flavor!
