Place the cleaned beef tripe in a pot, cover with water, add the onion, the head of garlic, and season with enough salt. Cover the pot and cook for 40 minutes; you can check if it is cooked by inserting a fork, and if it goes through easily. Remove from the water and set aside. Chop the tripe into small squares.
