Tuna Patties with Broccoli

Nothing like homemade food but with a different and original touch. This is the recipe for Tuna Patties with Broccoli, a Lent recipe that is very productive and economical. Like any dish, it can have a lighter version, bake the tuna patties at 180°C, with a bit of cooking spray and remove until golden brown.

  • 1 broccoli, small
  • salt
  • 1 cup asadero cheese, diced
  • 2 San Juan® eggs
  • 3 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 cups canned tuna, drained
  • 1/2 cups breadcrumbs
  • salt and pepper, for the broccoli patties
  • vegetable oil, for frying
  • 4 tomatoes, for the guajillo sauce
  • 6 guajillo chiles, for the guajillo sauce
  • 2 chipotle chiles, for the guajillo sauce
  • 1/4 onions, for the guajillo sauce
  • 1 clove garlic, for the guajillo sauce
  • 2 cups chicken broth, for the guajillo sauce
  • 1 tablespoon fresh cilantro, for the guajillo sauce

  • In a pot over medium heat, bring the water to a boil and cook the broccoli with a little salt until tender and bright. Remove and stop the cooking in ice water, drain.
  • Cut the broccoli into small pieces and mix with the asadero cheese, Huevo San Juan®, onion, garlic, tuna, breadcrumbs, and season with salt and pepper.
  • Form the patties with your hands and cook with a bit of oil over medium heat in a skillet until golden. Drain on paper towels.
  • For the sauce, in a medium pot heat 1 tablespoon of oil and fry the tomatoes, guajillo chili, chipotle chili, onion, and garlic until softened. Add the chicken broth, bring to a boil, and cook for 5 more minutes, then add the cilantro. Let it cool slightly.
  • Blend the sauce ingredients until smooth.
  • In a saucepan, heat another tablespoon of oil over medium heat and pour in the sauce, season with salt and pepper, and cook for 10 more minutes.
  • Place the tuna patties and pour the sauce over them, decorate with cilantro and rings of green onion.
