  • 5 tomatillos, (tomatillo), for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1 serrano chile, for the sauce
  • 1 árbol chile, for the sauce
  • 1/4 cups cilantro, for the sauce
  • salt, for the sauce
  • pepper, for the sauce
  • cumin, for the sauce
  • 1/4 cups water, for the sauce
  • vegetable oil, for frying
  • 12 corn tortillas
  • vegetable oil
  • 12 slices turkey deli ham, for filling
  • 2 cups Manchego cheese, grated, for filling
  • sour cream, for serving
  • queso fresco, for serving
  • refried beans, for serving

  • Roast the tomatoes, onion, garlic clove, serrano chili, and árbol chili on a griddle for 5 minutes or until well charred.
  • Blend the charred vegetables, cilantro, salt, pepper, cumin, and water until you obtain a smooth sauce. Pour the sauce into a pot with a little oil and cook for 10 minutes.
  • Sauté the tortillas in a pan over medium heat with enough oil until they are soft. Fill with ham and cheese, roll up, and set aside.
  • Place 3 ham enchiladas on a plate, drizzle with the green sauce, and garnish with cream and cheese.
