White Fish Veracruz Style

We present to you a very traditional recipe from the state of Veracruz, Mexico. The fish Veracruz style is a typical dish of Mexican cuisine, with a delicious flavor, resulting from its sauce made of tomatoes, onions, capers, olives, and yellow chilies. This baked fish recipe is easy to cook and has a flavor that will transport you to the beautiful port of Veracruz.

  • 4 red snapper
  • 1 white onion
  • 6 tomatoes
  • 2 cloves garlic
  • 1/4 cups capers
  • 1/4 cups green olives
  • güero chile
  • pinches salt

  • 1/4 cups olive oil

  • Season the fish with salt and pepper on both sides. Set aside in the refrigerator until ready to use.
  • Slice the onion into feathers. Slice the garlic into thin pieces. Set aside.
  • Heat a pot of water. For the tomatoes, remove the stem with the help of a knife. From the other end, cut a cross in the skin of the fruit to make it easier to peel. Place the tomatoes in boiling water for three minutes, remove them, and immerse them in ice water. Wait a minute and take them out of the water. With your hand, peel off the skin.
  • Cut the tomatoes into small cubes.
  • Slice the olives.
  • Add olive oil to a skillet. Sauté the onion; once it is translucent, add the tomato and garlic. Cook for 10 minutes, turn off the skillet, and incorporate the capers, olives, and yellow chilies.
  • Cut a piece of aluminum foil twice the size of the fish fillet. Grease the foil on the shiny side. Place the fillet on top and add some of the sauce you prepared. Seal the aluminum foil well. Repeat this step with all the fillets.
  • Bake at 180° C for 20 minutes.
