Mofongo with Shrimp

Mofongo is a Puerto Rican dish made from fried green plantains mashed with pork cracklings and can be consumed at lunch, dinner, or as a light meal. Try this delicious mofongo that is also accompanied by tasty shrimp. You will love it!

  • vegetable oil, for frying
  • 2 plantains
  • 3 cloves garlic
  • 1 tablespoon olive oil
  • 1 cup pork rinds, in small pieces
  • 2 tablespoons vegetable oil
  • 1 cup onion, chopped
  • 1/2 cups yellow bell pepper
  • 1/2 cups green bell pepper
  • 1 tablespoon garlic, chopped
  • 1 cup tomato sauce
  • 1/4 cups cilantro
  • salt
  • pepper
  • 1 leaf bay
  • 2 cups pink shrimp
  • cilantro, for garnish

  • In a deep skillet, heat the oil over medium heat and add the green plantains, frying for 5 minutes. Remove and place on paper towels to absorb excess fat.
  • In a mortar, place the garlic, plantains, and olive oil, and mash until broken down. Add the pork cracklings and continue mashing until you have a pasty consistency. Using the mortar and a spoon, form a semicircle or half-moon shape. Set aside.
  • Heat a skillet over medium heat, add vegetable oil, onions, bell peppers, celery, and chopped garlic. Add the tomato sauce, cilantro, salt, pepper, and bay leaf. Cook for 5 minutes, add the shrimp, cover, and cook for 5 more minutes.
  • Unmold the mofongo onto a plate and serve with the shrimp. Garnish with cilantro and enjoy.
