These mushroom tacos al pastor are an ideal option if you want to avoid meat in your diet. Best of all, they are prepared with one of the favorite marinades of Mexicans: the al pastor meat marinade. Enjoy them in your weekly menu!
5 guajillo chiles, clean, without stem or seeds, hydrated in hot water
2 ancho chiles, clean, without stem or seeds, hydrated in hot water
1/2 cups pineapple, natural, chopped, for the marinade
1 cup orange juice, seedless, natural, for the marinade
45 grams achiote, for the marinade
1 teaspoon oregano, for the marinade
1 teaspoon cumin, for the marinade
2 cloves, for the marinade
3 black peppercorns, for the marinade
salt, for the marinade
2 tablespoons vegetable oil
corn tortillas, hot
1/4 cups cilantro, finely chopped
1/4 cups onion, finely chopped
1/4 cups pineapple, in slices, to accompany
lime, in thirds
avocado, to accompany

For the marinade: Roast the garlic along with the onion and tomato on a hot griddle until the skin darkens. Remove from heat.
Blend the above with the guajillo chili, ancho chili, pineapple, orange juice, achiote, oregano, cumin, cloves, whole pepper, and enough salt until fully integrated. Reserve.
Place the Freshly® by Eva® baby mushrooms in a bowl, pour in the marinade and marinate for 30 minutes.
After the marinating time, place the Freshly® by Eva® baby mushrooms in a pan with enough hot oil, cook over medium heat, stirring constantly until they are sufficiently browned.
Serve the mushrooms al pastor on warm tortillas, accompanied by onion, cilantro, sliced pineapple, lime, and guacamole to taste.
