Nachos with Birria

  • 1 onion, cut into large pieces, for the marinade
  • 10 cloves garlic, for the marinade
  • 10 Roma tomatoes, for the marinade
  • 1 tablespoon allspice berry, for the marinade

  • 4 guajillo chiles, clean, for the marinade
  • 2 ancho chiles, clean, for the marinade
  • 3 tablespoons white vinegar, for the marinade
  • 4 cups water, for the marinade
  • 1/2 onions, for the meat
  • 1 garlic head, for the meat
  • 1 bouquet garni, for the meat
  • 800 grams beef shank
  • 1 kilo beef chump
  • 3 allspice berries, for the meat

  • For the marinade: Heat the vegetable oil in a deep skillet over medium heat, add the onion and garlic, and cook for 5 minutes, then add the tomatoes and cook until they break down. Then add the allspice and black pepper, cumin, thyme, oregano, cinnamon, bay leaf, árbol chili, guajillo chili, ancho chili, white vinegar, and finally a little water to help soften all the ingredients. Cook for 10 minutes and set aside.
  • Blend for 5 minutes or until everything is completely ground.
  • Cook the meat in a pressure cooker with enough water, add garlic, onion, and allspice. Cook for 30 minutes. Uncover and add the marinade, seasoning with salt. Cook for another 20 minutes and set aside.
  • Remove the meat from the broth and chop it. Set aside.
  • For the nachos: Place the tortilla chips, beans, birria, birria broth, and cheese on a platter. Melt the cheese and garnish with onion and cilantro leaves.
