For the marinade: Heat the vegetable oil in a deep skillet over medium heat, add the onion and garlic, and cook for 5 minutes, then add the tomatoes and cook until they break down. Then add the allspice and black pepper, cumin, thyme, oregano, cinnamon, bay leaf, árbol chili, guajillo chili, ancho chili, white vinegar, and finally a little water to help soften all the ingredients.
