Nopal Cakes with Ham and Battered Cheese

Prepare these nopal cakes with cheese, made with ham, and accompanied by a guajillo and morita chili sauce.

  • 4 cups baby nopales, cut into strips
  • 5 eggs, for the batter
  • 8 slices deli ham, cut into strips
  • 8 slices panela cheese
  • 1 pinch salt, for the sauce
  • 1 pinch pepper, for the sauce
  • 1 teaspoon herb bundle, mixed, for the sauce
  • 3 guajillo chiles, rehydrated and seedless
  • 1 cup vegetable broth, for the sauce
  • morita chile, for the sauce
  • 3 tomatoes, for the sauce, poached and skinless
  • 1/4 white onions, for the sauce
  • 2 cloves garlic, for the sauce

  • Blend the tomato, guajillo chili, morita chili, onion, garlic, cumin, fresh cilantro, the mix of dried herbs, and chicken broth.
  • Add the sauce to a pot with hot oil and cook for 5 minutes.
  • Beat the egg whites and yolks separately to make the batter.
  • Take a slice of ham, a slice of cheese, and place them between 2 whole nopales like a sandwich. Secure well with wooden toothpicks.
  • Coat the stuffed nopales in flour and then in the batter.
  • Cook the battered nopales in a skillet with hot oil over medium heat on both sides until they are nicely browned, but not burnt.
  • Remove from heat and remove excess oil with the help of a paper towel.
  • Serve the battered nopales with the sauce and garnish with fresh cilantro.
